Ingredients
- Beef mince 350 g
- White bread 2 slice
- Milk 100 ml
- Chicken egg 1 pcs
- Salt 0.5 tsp
- Ground black pepper 0.5 tsp
- Onion 1 pcs
- Butter 40 g
- Herbs 4 sprig
- Vegetable oil 3 tbsp
- Cornmeal 70 g
For the sauce
- Onion 1 pcs
- Button mushrooms 500 g
- Broth 3 cup
- Cream 1 cup
- Thyme 3 sprig
- Garlic 2 clove
- Salt 1 tsp
- Ground black pepper 1 tsp
Directions
Step 1

Peel the onion and garlic. Rinse the mushrooms and herbs. Prepare a frying pan.
Step 2

Trim the crusts from the bread and soak the crumb in milk for 10 minutes. Then squeeze it out and add to the mince.
Step 3

Add the egg, salt, and pepper to the mince.
Step 4

Finely chop the onion and sauté in 1 tbsp of well-heated vegetable oil until golden. Let it cool slightly and add to the bowl with the mince.
Step 5

Mix all the combined ingredients well. Pound the mince several times against the bottom of the bowl to make it denser and more tender, so the cutlets won't fall apart later.
Step 6

Form the mince into round patties about 0.5 cm thick. Place a small piece of butter on one of the meat patties.
Step 7

Finely chop the herbs. Sprinkle the butter piece with a small amount of herbs.
Step 8

Cover the filling with a second meat patty and pinch the edges tightly to form a cutlet. Repeat with all remaining ingredients.
Step 9

Coat the cutlets on both sides with cornmeal. Heat a frying pan with 2 tbsp vegetable oil. Place the cutlets in the pan and fry for 2–3 minutes on each side until lightly browned. Transfer to a plate.
Step 10

Finely chop the onion and mushrooms. Add the onion to the same pan and sauté until translucent.
Step 11

Add the button mushrooms to the onion. Sauté the vegetables together until the moisture evaporates from the mushrooms and they brown. Finely chop and add the thyme and garlic.
Step 12

Pour the broth into the pan with the vegetables. Stir and add the cream. Season the mixture with salt and pepper. Stirring, wait until the sauce thickens slightly.
Step 13

Return the cutlets to the pan with the sauce. Reduce the heat to low and cover the pan. Let them braise for 5 minutes, turning once after about 2 minutes.
Step 14

Serve the juicy cutlets with mashed potatoes, generously drizzled with creamy mushroom sauce. Sprinkle with chopped herbs.
