Quinoa and Shrimp Bowl

Ingredients

  • Shrimp 200 g
  • Quinoa 60 g
  • Water 120 ml
  • Salad leaves 30 g
  • Radish 30 g
  • Cherry tomatoes 50 g
  • Avocado 70 g
  • Lemon juice 10 ml
  • Garlic 2 g
  • Olive oil 10 ml
  • Ground black pepper to taste
  • Dried thyme to taste
  • Salt to taste

For serving

  • Sesame seeds optional

    Thaw the shrimp. Remove the heads and shells. Rinse the shrimp under running water and remove the vein from the back. Wash and dry the salad leaves, tomatoes, radish, avocado, and herbs. Peel the garlic and avocado.

    Press the garlic. Place the shrimp in a deep bowl. Add the garlic, salt, thyme, and dried thyme. Mix and let the seafood marinate for 10-15 minutes.

    TipOptionally, add dried garlic, oregano, basil, black or red ground pepper, and lemon juice to the marinade.

    Pour the quinoa into a small saucepan. Cover with water, add salt, and place over medium heat. After boiling, reduce the heat to low. Cook for 15 minutes under a lid.

    Slice the radish into thin rounds and the cherry tomatoes into quarters. Tear the salad leaves into pieces. Place the radish, salad, and tomatoes in a deep bowl. Season with salt and pepper.

    TipTo taste, add cucumber, celery, bell pepper, Peking cabbage, cilantro, sprouts, beans, and other vegetables or herbs to the salad.

    Heat olive oil in a pan over medium heat. Sauté the shrimp for 2 minutes on each side.

    TipIt's important not to overcook the seafood on the stove so they don't become rubbery.

    Slice the avocado into thin slices. Sprinkle them with lemon juice to prevent browning.

    Add the quinoa to the other ingredients, mix, and distribute among deep plates. Top with avocado, fresh vegetable salad, and fried shrimp.

    TipDrizzle the bowl with soy sauce, sprinkle with balsamic vinegar and honey.
