Ingredients
- King prawns 120 g
- Pumpkin 300 g
- Millet 130 g
- Butter 50 g
- Parmesan 50 g
- Dry white wine 100 ml
- Onion 0.5 pcs
- Garlic 2 clove
- Chicken broth 3 cup
- Refined sunflower oil 2 tbsp
- Salt 0.5 tsp
- Ground black pepper 1 pinch

Directions
Step 1

Take the shrimp out of the freezer. Wash and peel the pumpkin. Rinse the millet until the water runs clear. Peel the onion and garlic. Prepare a grater, one deep and one small flat pan.

Step 2

Dice the onion into 3-4 mm cubes. Finely chop the garlic. Cut the pumpkin into cubes about 1 cm per side. Finely grate the Parmesan.
Step 3

Heat a deep pan over medium heat, melt 25 g of butter. Add the olive oil and sauté the onion, stirring, until translucent and golden at the edges. This will take 2-3 minutes. Add 1 minced garlic clove and continue cooking for another 30 seconds.
Step 4

Add the millet to the vegetables in the pan. Sauté for 5 minutes, stirring frequently. Add the pumpkin cubes. Cook, stirring, for another 5 minutes or so until the vegetable is tender.
Step 5

Pour the wine into the millet and vegetables. Stir and simmer for 2-3 minutes to let the alcohol evaporate. Add 1.5 cups of broth and reduce the heat to low. Simmer the risotto for 10-15 minutes, stirring occasionally, until the grain absorbs the liquid.
Step 6

Add another 0.5 cup of broth and let it absorb into the millet. This will take another 10 minutes. Add the remaining broth in two additions with roughly the same interval, until the grain is almost cooked.
Step 7

While the risotto is cooking, heat a small pan over high heat. Melt 25 g of butter. Sauté the remaining 1 minced garlic clove until fragrant. This will take about 30 seconds. Sauté the shrimp in the garlic butter for 1 minute per side until lightly golden. Season with half of the prepared salt and pepper, stir, and remove the pan from the heat.
Step 8

Add the grated Parmesan, remaining salt, and black pepper to the finished risotto. Stir thoroughly and remove the pan from the heat. Divide the risotto among serving plates and place the sautéed shrimp on top.
Step 9

Serve the millet risotto with shrimp.
