- Eggplant 3 pcs
- Carrot 3 pcs
- Bell Pepper 3 pcs
- Red Hot Pepper 100 g
- Onion 3 pcs
- Garlic 4 clove
- Red Wine Vinegar 2.5 tbsp
- Vegetable Oil 2.5 tbsp
- Sugar 1 tbsp
- Salt 1 tsp
- Ground Black Pepper 0.5 tsp
Directions
Step 1

Peel the onion and garlic. Wash and peel the carrot. Wash and dry the eggplant and peppers. Remove the seeds, partitions, and stems from the bell peppers. Prepare a sterilized jar with a lid and a large pot.

Step 2

Cut the eggplants into medium-sized cubes. Cover with water and add salt. Leave for 15 minutes. After that, drain the vegetables in a colander and wait for the water to drain.
Step 3

Cut the bell pepper into strips and the onion into half-rings. Grate the carrot on a Korean grater or chop it very thinly with a knife.
Step 4

Combine all prepared vegetables in a pot: eggplants, carrot, bell pepper, and onion. Pour in the vegetable oil, mix, and place on the stove. Simmer the vegetables over low heat for 20 minutes, stirring occasionally.
Step 5

Mince the hot pepper and garlic. Add to the vegetables. Pour in the vinegar, sprinkle with sugar, salt, and pepper. Remove from the heat and mix. Let the vegetable mixture infuse for 15 minutes so that the aromas and flavors of the vegetables blend together.
TipIf you want the dish spicier, do not remove the seeds from the pepper. But if you plan to get a slightly milder flavor, then scrape out the seeds along with the partitions.
Step 6

Transfer the vegetables to a previously sterilized jar. Line a large pot with a towel and place the jar on the fabric. Fill the container with water up to the 'shoulders' and cover with a lid, but do not tighten it.
Step 7

Place the pot with the jar over medium heat and sterilize for 30 minutes from the moment it boils. After that, carefully remove it and immediately tighten the lid. Turn the jar upside down, placing it on the fabric. Wrap it in a towel and let it cool completely.
Step 8

Store the spicy canned eggplants in a cool, dark place. A cellar or cold pantry is ideal.
