Ingredients
- Potatoes 4 pcs
- Pork and beef mince 150 g
- Chicken egg 1 pcs
- Salt 1 tsp
- Seasoning for mince 1 tsp
- Vegetable oil 3 tbsp
For serving
- Sour cream to taste
- Green onions to taste
- Radish to taste
Directions
Step 1

Wash and peel the potatoes. Thaw the mince. Wash the chicken egg.
TipAfter peeling, place the potatoes in cold water to prevent them from darkening and drying out.

Cut the potatoes into small wedges.
TipThe smaller you cut the vegetables, the faster they will cook.

Place the potatoes in a pot and cover with cold water.

Place the pot with potatoes over medium heat and add salt. After it boils, cook for another 25 minutes.
TipTo make the potatoes more aromatic, add a whole onion, a carrot, and a bay leaf. Then simply remove them from the pot.

In a bowl, mix the mince with the chicken egg, salt, and spices. Refrigerate the mince while the potatoes are cooking.
TipChoose spices to taste. This could be a pepper blend, herbes de Provence, or paprika.

Cool and grate the potatoes. If there is excess liquid, squeeze it out.

Divide the mashed potatoes into 5 equal parts.

Form small patties. Divide the mince into 5 equal parts and place it on the potato bases.

Form the pies, wrapping the filling inside.

Heat vegetable oil in a skillet. Fry the 'kalduny' for 7 minutes per side over medium heat. After flipping, cover the skillet with a lid.
TipEither vegetable oil or clarified butter (ghee) will work.

Serve the 'kalduny' with sour cream and onions, garnishing the portion with fresh vegetables.
