Ingredients
- Chicken fillet 150 g
- Rice flour 100 g
- Starch 40 g
- Milk 1 l
- Sugar 200 g
- Vanilla extract 1 tsp
- Ground cinnamon 1 tsp

Step 1
Prepare all the necessary ingredients, as well as several saucepans and a rectangular mold.
Step 2
Cover the chicken fillet with water, bring to a boil, and cook over medium heat for 20–25 minutes.
TipThe chicken breast should be fresh; do not use frozen meat.
Step 3
Cool the cooked chicken and shred it by hand or with a fork into very fine fibers.
Step 4
Rinse the chicken well, squeeze out the water, and cover with cold water for 10 minutes. Repeat this procedure 3 times and squeeze the meat again.
Step 5
Whisk the rice flour, starch, and 100 ml of milk with a whisk until smooth.
Step 6
Heat the remaining milk in a small saucepan. When the milk starts to boil, pour the flour mixture into the saucepan.
Step 7
Cook the milk for 5–10 minutes over low heat until thickened, stirring thoroughly.
Step 8
Mix the chicken with 3–4 tbsp of the hot milk mixture.
Step 9
Transfer the meat to the saucepan with the remaining cream and whisk everything together.
Step 10
Add the sugar to the saucepan, stir, and cook the mixture for another 1 minute until the spice dissolves.
Step 11
Remove the pudding from the heat, add the vanilla extract, and stir.
Step 12
Lightly spritz the rectangular mold with water and pour the dessert into it. Refrigerate the pudding for at least 1 hour.

Cut the finished pudding into small pieces and sprinkle with cinnamon.
