Ingredients
- 9% fat cottage cheese 450 g
- 33% fat cream 0.5 cup
- Boiled condensed milk 1 cup
- Powdered gelatin 1 tsp
- Water 1.5 tbsp
For the glaze
- White chocolate 300 g
- Vegetable oil 3 tbsp
- Nuts 20 g
Directions
Step 1

Prepare a mixer, sieve, piping bag, 2 bento cake pans 5 cm high and 10 cm in diameter. You will also need a culinary thermometer.
Step 2

Heat the water until it is slightly warm. Pour over the gelatin, stir, and let it swell. Then heat, stirring, over low heat until completely dissolved and remove from the stove. Let it cool.
Step 3

Pour the gelatin into the cream and mix. Add the boiled condensed milk and blend until smooth.
Step 4

Rub the cottage cheese through a sieve or blend it. Add it to the combined ingredients. Blend into a smooth, uniform dough.
TipIf you want to make the bento cake colored, add a couple of drops of food coloring. It's best to use smooth cottage cheese so there are no lumps in the Easter cake and it's easier to process.
Step 5

Transfer the mixture to a piping bag. Fill the molds, piping the dough in a spiral. Level the top layer with a spatula.
TipIf you want to add a filling, place it between the layers of dough. For example, use freeze-dried berries, as fresh ones will release juice, and the Easter cake might become soggy.
Step 6

Cover the molds with plastic wrap and place them in the freezer for 6–8 hours.
Step 7

Make the glaze. Break the chocolate into small pieces and melt in the microwave in short pulses. Be sure to stir during pauses so it melts evenly and doesn't burn around the edges.
Step 8

Pour vegetable oil into the melted chocolate and mix.
Step 9

Chop the nuts. Add them to the glaze and mix well so they are evenly distributed throughout the mixture.
Step 10

Measure the glaze temperature with a culinary thermometer. It should be 35 °C for even distribution over the cake.
Step 11

Remove the bento Easter from the mold and place it on a wire rack. Immediately pour the glaze over all sides, holding the rack at a 45-degree angle. Repeat the same with the second bento Easter. Transfer the finished bento Easters to a plate lined with parchment paper and refrigerate to stabilize.
TipIt's important to cover the pieces with glaze before condensation forms on them. Transfer any leftover glaze to an airtight container and store in the refrigerator for no more than 2 weeks.
Step 12

Place the bento Easters in special packaging and decorate to taste.
