Beef Liver Pancakes

  • Beef liver 250 g
  • Chicken egg 1 pcs
  • Bread flour 4 tbsp
  • Onion 100 g
  • Garlic 2 clove
  • Vegetable oil 3 tbsp
  • Salt to taste
  • Ground black pepper to taste
  • Spices to taste

    Take the liver out of the freezer in advance and thaw at room temperature. Then rinse it under cold water, removing membranes and sinews. Peel and wash the onion and garlic.

    Pat the liver dry with paper towels. Cut it into small pieces.

    Place the liver pieces in a blender bowl. Blend until smooth. Transfer the liver to a deep bowl.

    TipIf you don't have a blender, you can grind the beef liver through a meat grinder.

    Also grind the onion in a blender or finely chop it with a knife.

    TipTo prevent the cutting board from absorbing the unpleasant onion smell, rub it first with a lemon wedge.

    Press the garlic cloves through a press.

    TipIf you don't have a garlic press, finely chop it with a knife or grate it on a small grater.

    Mix the minced onion and garlic with the liver.

    Add flour, egg, salt, pepper, and spices to taste to the bowl with the ingredients. Mix the liver batter thoroughly.

    TipDried basil, thyme, or oregano work perfectly as spices for liver pancakes.

    Heat the skillet over medium heat and add vegetable oil. Using a tablespoon, place portions of the batter onto the skillet, pressing them slightly to form flat pancakes.

    Fry the pancakes over medium heat until golden brown on each side for about 4-5 minutes. Then transfer them to a plate with a dry napkin.

    TipThe recipe indicates approximate cooking time. Exact time depends on your stove, skillet, and the consistency of the liver batter. There should be no blood in the cooked pancakes, either inside or outside.
